Hi, Farah's here~! If you've ever visited Negeri Sembilan, you've probably had the region's most well-known dish, salai masak lemak cili api. It can be prepared with various ingredients such as beef, chicken,etc. Never tried this dish before? Then, you are unaware of what you are missing out on.

Here's why;

 The first thing you’ll take notice is no doubt the smell of smoked meat wafting in the air as soon as the dish was served. Not only that, the dish is unique with its outstanding yellow colour (due to turmeric) and long-lasting spicyness. As a lot of cili padi has been added and prepared with herbs, spices, and coconut milk, the spicy food enthusiasts will appreciate this.

    In Negeri Sembilan, the meats used in their dish are usually barbecued (or known as ‘salai’ in Malay) first, to provide the distinctive smoky flavor. Hence, most stores serving salai masak lemak cili api has a common sight of an open barbecue area. Every store uses a different method for grilling meats, whether it be with standard charcoal, specific tree branches, or even coconut husks. The basic components of the dish's recipe, which has been handed down through the generations, are always santan, turmeric, cili api, and herbs.
